Do a search on Pinterest or just google it: cauliflower rice. You will find a plethora of recipes on how to cook it and season it. But what is this fairly new “healthy” trend?
What is cauliflower rice?
Simply, cauliflower rice is cauliflower chopped up in rice sized bits–usually using a food processor. It’s light and fluffy like couscous with just the right amount of chew like rice.
Why eat it?
A staple in the American diet is white rice. It’s “neutral” taste seems to go with just about any food. But, white rice gets digested quickly, is rapidly processed into sugar, and only fills you up for a short period of time. White rice has essentially been stripped of most of its nutrients. White rice is also high in carbohydrates. One cup of either white or brown rice contains 45 grams of total carbohydrates. And that’s a lot of caloric bang for very little nutritional bang.
Cauliflower , on the other hand, is supremely healthy. A cup of boiled cauliflower contains just 28 calories and 5 grams of total carbohydrate, yet 10% the recommended daily value (RDV) of fiber, 10% the RDV of vitamin B-6 and 90% the RDV of vitamin C.

- Fiber helps to normalize bowel movements.
- Fiber helps to lower cholesterol levels.
- Fiber helps to control blood sugar.
- Fiber seems to reduce the risk of heart disease, diabetes and cardiovascular disease.
- Fiber also slows down digestion, which helps you feel fuller for longer after you eat.
Plus, cauliflower is also known as a cruciferous vegetable. Cruciferous vegetables have been shown to reduce chronic inflammation.
